Something new for old friends

A friend of mine runs a Chinese restaurant in a town I used to live in. During a recent trip I learned that she might be moving the restaurant soon, and that she wanted some new ideas for nicer, leaner dishes, so I thought I might see what I could come up with. I wanted something similar to their present fare, and that last dish I had there contained vegetables and what she called 'brown sauce'. Easy enough.

The problem I have with the dishes at most Chinese restaurants is that they tend to be drenched in some sort of sauce or grease. This, however, is not typical of the more posh restraints in america, which makes me feel there might be a bit of a correlation between unhealthy food and the lower classes...but it's strange...why use more food if you've got less money? Wouldn't the idea to be to save as much as you can? It's been said to me that it might have something to do with the "more for your money" line of reasoning...the problem, I feel, is that people don't quite consider what, exactly, they're getting, and whether or not it is actually the best thing for them in the end. I can't change the world, or even the way people think about it, but I can certainly control what I give to them, and it's going to be the best I can give.
